Especially for the home cook and home baker, finding the right pots and pans that perform well in the kitchen, that last and that make life easier is a real challenge. I know it was always that way for me. I’ve practically lost count of the number of non-stick pans I’ve owned over the years that created more sticky frustrations than they were ever worth.

The problem has always been sorting through what is an isn’t real and trying to avoid over-promises that inevitably lead to disappointment.

While weak connection at the handles and uneven heating has been a problem with some of the pans I’ve owned, the biggest problem has been dealing with non-stick surfaces that wear easily. Especially with the frying pans, the surfaces are easily scratched and once they are, the problem gets progressively worse until everything sticks without first adding lots of oil or butter to the pan.

The Gotham Steel Difference

Gotham steel pots and pans are unique in a lot of ways but what is most impressive is the non-stick surface. It is far more durable than any other non-stick surface I’ve tried in the past and this is after a full year of using these pans daily, and often two or three times each day.

I do take care not to use any metal utensils on these, even though Gotham Steel says you can. I also always wash these by hand rather than throwing them in the dishwasher so they rarely see anything more than a damp cloth with little or no soap.

I also take a bit of extra care when I store them. The set I have is stackable so I have some space in my cabinet where I can easily create a neat stack. That helps ensure the pans aren’t getting banged up and scratched just my putting stuff away and taking stuff out.

Gotham Steel’s Patented Coating

I have to admit, the first thing that caught my attention with these pots and pans was the look of them. The copper finish is unlike just about anything else you’ll see and it does look great. But as they say, beauty is only skin deep and I wasn’t about to get roped in by good looks so I looked a lot closer.

Dig into the details of this pan and the first thing that pops out is the unique ceramic coating they apply to these pans. It is a patented finish that combines ceramic for its non-stick qualities, with titanium for strength and durability.

It is the only pan I am aware of that has taken this hybrid approach to develop a non-stick surface and it really does make a significant difference. Gotham Steel is so confident that this blend creates a far more durable surface that they suggest even metal utensils are okay to use with these pans and that is something no other non-stick cookware recommends doing.

A Balanced Design

It isn’t just about the non-stick surface. The tri-ply solid aluminum material used for these pans makes an obvious difference from the first moment you pick one up. They are solid and well balanced, without being too heavy to comfortably handle. For comparison, stop and pick up a ceramic coated cast iron pan. It will also have some pretty decent non-stick qualities but will weigh 3 or 4 times as much as the same size Gotham Steel cookware.

Next are the handles. Many other pans have solid handles that are joined to the pan with screws. These always loosen, eventually rust, and inevitably fail. The handles on the Gotham Steel pans are double-riveted, suing a wide metal flange to create a solid connection that you’ll have confidence in. Flip and shake to your heart’s content. They also stay cool thanks to their hollow stainless-steel construction so don’t worry about having to work with a towel or glove.

There is more and beyond the non-stick performance of these pots and pans, the way they heat and cool is exceptional. They heat very evenly, they hold that heat well when on the burner, and they cool very quickly once you take them off the heat. This means your dishes cook evenly and will stop cooking quickly once you decide they are done and take them off the heat.

The Brand

This company has been making non-stick cookware and bakeware for 3+ years now and has racked up some pretty impressive feedback over those years. They also partnered with some impressive organizations like the World Food Championship, where contestants used Gotham Steel pots and pans exclusively are with spectacular results.

In addition to these partnerships, they have some big names in the world of cooking supporting their products. Celebrity chefs like Daniel Greene and Josh Capon are just two that are using a loving these pans.

They also have a very strong reputation for customer service with a solid warranty and a great team of support staff that’s just a phone call or text message away.

At the end of the day though, I fall back on my own experience with these pans and after more than a year of constant use, I still love them.

Non-Stick Technology

They call it Ti-cerama, which is a fancy way of pointing out the two main ingredients in the non-stick surface of all of their pots and pans.

As mentioned above, this is a mix of titanium steel and ceramic, and the unique way these are blended and applied to this cookware and bakeware is patented.

The result is a completely smooth surface that absorbs almost nothing and that is what makes these non-stick pans truly non-stick.

Like the pores on our skin that trap dust and dirt, pores in any cooking surface create problems with sticking. Reduce the number of those pores and the depth of each pore and you dramatically reduce the risk of sticking. By creating a nearly perfect surface, Gotham Steel pans achieve their goal.

Types of cookware

When shopping for cookware and bakeware, you are going to come across a wide range of types. These include various types of coated pots and pans, using a variety of materials, and other natural materials that may not be coated at all.

In the non-stick category, you’ll find things like Teflon and other man-made materials that are applied over various types of steel and aluminum.

In the natural category, you’ll encounter stainless steel, carbon steel, and cast iron. You also find a variety of “stone” cookware that uses a natural blend of material that creates a durable and non-stick surface.

Each of these has its pros and cons, but in the end, you have to consider the risks of using man-made chemical coatings and the drastic price differential that comes with stone and carbon steel cookware.

Gotham Steel cookware eliminates the risks while keeping costs in a range that most homes can reasonably afford and that is why I chose to go with Gotham Steel.

With so many sizes and shapes, it can be a bit tough to decide what is going to work best for you. In short, you’ll need to consider those dishes you most often prepare. Then give some thought to what else you might want to experiment with if you had the right pot or pan. Do you prepare most of your meals on the cooktop or do you like to bake as well?

All of this will factor into the kinds of pots and pans you’ll need in your kitchen. You might find that all well covered in a set or you may find that only certain individual pans will have you covered.

Conclusion

Through personal experience, I can tell you that I have never been disappointed with my choice of cookware. I’ve since invested in the Gotham Steel bakeware as well and I am just as thrilled with those as I am with my pots and pans.

They just need a bit of tendering loving care, and that means gentle washing, silicone or wooden utensils exclusively and no harsh soaps or abrasives. Do that and I’m certain you’ll have a great time with these Gotham Steel pots and pans too.
